  • ¼ teaspoon of dry oregano
  • ¼ teaspoon of dried basil
  • ¾ to 1 teaspoon of mixed herbs
  • some spring onion greens
  • grated cheddar cheese (optional)

Making White Sauce

  • In a saucepan, heat the oil. Reduce to a low heat and add 2 tablespoons butter. Butter can be salted or unsalted.
  • Add 1 tablespoon whole wheat flour or 2 tablespoons all-purpose flour once the butter has melted and begun to bubble.
  • As soon as you add the flour, mix it briskly with a wired whisk. Stir constantly to prevent lumps from forming. The flour cooks more evenly when you stir it frequently. While swirling, you’ll notice the flour foaming and bubbling up. Sauté the flour until it emits a pleasant cooked scent and turns a pale golden colour. Browning the flour isn’t necessary.
  • Reduce the heat to the lowest setting and slowly add 1 cup chilled milk into the pan. With one hand, pour the milk and the other, whisk the sauce mixture. The milk must be cooled to prevent lumps from forming. Lumps can form if you use hot or warm milk, or milk that is at room temperature.
  • While the milk warms and heats up, stir often.
  • Simmer the sauce on a low heat until it thickens.
  • Switch off the flame when the sauce has thickened and coats the back of a spoon.
  • Maintain a low heat in the saucepan and season with 1/4 teaspoon black pepper powder, a liberal pinch of nutmeg powder or grated nutmeg, and salt to taste. Add 2 tablespoons grated cheddar cheese to make a cheesy sauce.
  • Mix thoroughly and set aside. Please keep in mind that as the white sauce cools, it will thicken even more. As a result, you’ll be able to maintain consistency.
